Hollow Crown parsnip has large, white roots that grow up to 15" long. They are sweet and flavorful. Pastinaca sativa.

Sowing Parsnip 'Hollow Crown' Seeds
Sow parsnip seeds outdoors 3 weeks before the last frost date. Soak overnight, then sow 1/2" deep and 4" apart in rows spaced 16" apart. Keep the soil surface moist until germination, which can be very slow. Full sun.
