Marshmallow is a tall, gangly plant with small, pinkish-white flowers. The leaves, flowers and roots are edible and have medicinal properties. The roots are usually harvested in autumn of the second year. 

Marshmallow root is one of my favorite tea herbs. It can be added to any herbal tea mixture without changing the flavor. It is very soothing for the throat and digestive tract. For more information on the health benefits, see this article.

Chop up the roots before drying, since they will be quite hard once they are fully dried. Deadhead plants to prevent excessive self-sowing. Hardy perennial in zones 5-9.

Sowing Marshmallow Seeds

Sow outdoors in early spring, 1/4" deep. Or start indoors 10 weeks before the last frost date, then refrigerate for 4 weeks. Full sun to part shade.
