Celtuce is a type of lettuce that is grown for its thick, bolted stems, which have the texture of broccoli stems and a flavor like cucumber and celery.

Sowing Celtuce Seeds

Sow celtuce seeds outdoors in early spring. Sow on the surface in very shallow furrows, or cover lightly with soil. Thin to 8" apart. Full sun to part shade.

Celtuce 'Sword Leaf' is known in Asia as Yu Mai Tsai. The long, thin, green leaves are good in salads. Space the plants at least 8" apart to get thick stems. Cut off the stems at the base when the plants begin to flower. Best used in stir-fries.

Also known as Pink Asparagus lettuce. This lovely celtuce has tasty leaves with green, mauve and bronze coloring. Peel the bolted stems using a vegetable peeler, and rinse off the bitter sap. Eat raw in salads or cooked in stir-fries.
