Eggplant 'Casper'

Casper eggplant produces 6" x 2" fruits with a white skin. The tender fruits have a smooth texture and a mushroom-like flavor that makes it delicious for many recipes. We love it in ratatouille. Good for short summer climates.

Sowing Eggplant Seeds

Start eggplant seeds indoors 6-8 weeks before the last frost date. Sow 1/4" deep. Transplant outside 2 weeks after the last frost date. Full sun. Spacing 16".
