French Sorrel, Garden Sorrel
(Rumex acetosa)
French sorrel is a perennial herb or vegetable with tangy, lemon flavored leaves. Used sparingly, it makes a nice addition to soups, salads, omelets, fish and meat dishes.
Sorrel is best picked when the leaves are young and tender, and they are greatly appreciated in the spring when there's little else in the garden. Another name for sorrel is spinach dock.
