Red Russian Kale has tender, blue-green leaves with red veins. It is sweetest when harvested in the fall after a light frost. My favorite variety.
We like to toss steamed kale with a mixture of roasted garlic, lemon juice and butter with a dash of salt. Kale can also be stir-fried or added to soups during the last five minutes of cooking time.
