Florence fennel is a popular vegetable in Italy, and some discerning cooks here in the U.S. also enjoy it. The bulbs can be eaten sauteed, cooked in soups, or raw in salads. Also known as Bulb Fennel, Sweet Fennel, or Finocchio.
Harvest the bulbs before the plants begin to flower. The anise-flavored leaves can be used in recipes as a substitute for dill weed.
